Quinoa Salad
February means it's time to renew your New Year's Resolutions, and this Mediterranean chopped salad is a perfect way to get your healthy proteins in! With Greek flavors like mint, pistachios, feta, parsley, and cucumbers, it’s a refreshing, super energizing salad. Make this Italian-inspired, with basil and oregano instead of mint, and mozzarella or provolone for the feta. You can even add chopped mangos & strawberries, and replace the pistachios with pecans, for a fruit-based quinoa salad that’s amazing!
