Miso Eggplant
Miso is such a healthy ingredient - it’s low in calories, with a good amount of protein, fiber, and amino acids from the soybeans, along with good-for-you minerals and vitamins. It’s also really great for your digestion, and because it’s fermented, it doesn’t have the negative effects you sometimes hear about consuming soy. Overall, it’s been known in Japan to be good for heart health, reduce cholesterol and blood pressure, and help your immune system. Miso eggplant is a fairly common dish at most izakayas, and definitely one of my favorite dishes. I hope you make “nasu no miso itame” as part of your regular Japanese food repertoire and impress your Japanese friends!
